India is the largest producer, consumer and exporter of garam masala in the world due to its appropriate climate and geography for spice cultivation. The Spices Board of India is the regulatory and export promoting agency in the country. There are so many spices cultivated in Kerala, Tamilnadu, Karnataka, Andhra Pradesh, Telangana, Odisha, West Bengal, Uttar Pradesh, Madhya Pradesh, Rajasthan, Gujarat, Jammu and Kashmir. Spices add not just the unique taste, flavour and aroma to the food but these have rather innumerable health benefits ranging from boasting general immunity to preventing cancer. Spices in garam masala are also important for healthy digestive system and blood circulatory system. The garam masala ingredients of BD Feeds are purchased very carefully from the known sources in order to get the original and fresh spices. We commonly use jeera (cumin), shahi jeera (black cumin), kali mirch (black pepper), safed mirch (white pepper), choti elaichi (small cardamom), badi elaichi (large cardamom), dalchini (cinnamon), laung (cloves), posta (poppy seeds), javitri (mace), jaiphal (nutmeg), badiyan (star anise), tejpatta (bay leaf), sounth (dry ginger), patthar phool (black stone flower), kabab chini (cubeb pepper/tailed pepper) and nagkesar (cobra’s saffron/Indian rose chestnut). These ingredients are cleaned properly to remove impurities. Now these components are mixed together in a fixed proportion followed by grinding, cooling and packaging. This garam masala gives mouth-watering flavour to both veg and non-veg dishes. We never mix dhania (coriander) powder in garam masala. Instead it is prepared and used separately.
